leftover pork, what can I make with it?

Have quite a bit of pork shoulder leftover from roast last night and not sure what I can make with it. Don't want it to go to waste...

Any ideas?

make it into a risotto?
I just put it in pan with stock, mushrooms onions and rice and let it boil then simmer for about half an hour

Put it with some stir fry vegatables, noodles and rice..and a chinese sauce.. sweet and sour, satay or kung po! Goes a long way and is very tasty

Chopped up small in Special egg fried rice??

delicious sandwiches

very good bread
hoisin sauce
chopped onions fried in oil
throw in the pork shoulder shredded
and hoisin sauce
and a bit of chopped green peppers
and eat on the bread
save a place for me I 'll be roundin 45 minutes

Thanks for all the ideas, I've made risotto as dd1 loves it, they're tucking into it right now

2nd question is can I freeze the portion that I have left as I know dh won't eat it for tea... funny old sod!

As long as none of it has already been frozen i don't see why not?
