Right doing this NOW and don't have any evaporated milk or (prob) vanilla extract.

What can I use instead?

can I boil and reduce normal milk?
Use condensed milk with less sugar in cake?

Oh thankyou! Okay so condensed ok, just checked- doesn't say unsweetened but I will just put a little bit less sugar in.

Vanilla pods no, bugger. I weirdly have rose farking water why???????????????????? But no vanilla extract!

I have vanilla ice cream?

Well it is done. But good god I must be out of kilter I have never made so many fuck ups in one sodding cake before. I made too little so had to make another batch, in which I forgot to add salt and cocoa, s'oky I mix them in - then tried to mix the two batches together whilst in baking tin.

At whic point I realised I hadn't put greaseproof paper in, so out cam mix - wash tin, line it, back goes mix. Into oven. Me with wine.

Sigh.

....I think the cake smelled a bit like hash. Is that usual Nigella style or did I make one fuck up too many?

Right off to make sausage rolls - bring it ON Delia!
