What can I make with boxes full of onions??

have just finish pulling up my crop of onions for the year and I have more than expected!! What can I make with them? Have thought of doing onion soup and freezing it in batches. Does anyone know any good receipes for it? The ones Ive found require 2 or 3 onions and lots of beef stock....if I make it like that the freezer will be full and still have loads left. Any suggestions welcome!!

This isn't very well known but I promise its authentic Italian and EVERYONE loves it - onion sauce for pasta.

All you do is (for say 4 people) is cut six large onions (but use as many as you like as it freezes perfectly) into rings and put in a big pan with a good amount of EV olive oil. Bring up to a good heat for 10 mins and then turn it right down and leave to caramelise for abour 2-3 hours or as long as you've got. You can add a bit of sugar to taste.

Eat with big pasta like rigatoni and lots of parmesan. It's so good and fool proof.

similar to frying and freezing you can make the following sauce for yummy quick fix moroccan lemon chicken.casserole:

  • grate 10 onions. Discard juice and put grated onion in thick pan
  • add 10 cloves crushed garlic
  • add 4 tsp ginger powder + 1 tsp tumeric + salt and pepper
  • add saffron strands if you have them
-add a tbsp butter and 4 tbsp olive oil.

Fry over high heat like you would for a curry paste then reduce heat add juice of 1 or 2 lemons ( or better 1 cut salty preserved lemon) and a handful chopped coriander.

Simmer gently until sauce thick. Add a little water if too thick and starts sticking to the bottom of the pan.

Cool and freeze in portions of about 4 ounces.

To assemble just fry chicken, add sauce and a little water and bake like a casserole.
