roasting a chicken tonight - can I make stock tomorrow?

Chicken is currently roasting, and by the time we've eaten and I've stripped the carcass, I'm going to be making stock till the middle of the night! Can I strip the carcass tonight and put everything in the fridge and make the stock in the morning? Or will the chicken be minging by then?

Sometimes I leave a carcass in the fridge for a few days before boiling it up! It'll be fine to make it tomorrow.

It will be fine. If you haven't got time to do it tomorrow you can freeze the bones.

Fantastic - had visions of boiling stock at midnight, which is not how I imagined spending the evening of my due date (not that there's any danger of spending the evening in labour - the baby appears perfectly content where it is!)
