I am going to roast a duck tomorrow. How?

I bought it weeks ago because it was on offer and it's been languishing in the freezer ever since. No instructions on the wrapping Please, how do I cook it?

Not sure about timings, but put it on a rack in a roasting pan as you will get tonnes of juices coming out of it.

Baste it regularly as duck can dry out quickly.

How heavy is it?

We had duck tonight. We just roasted without any covering for 45minutes. It was fine.

Also, prick the skin with a skewer (oh, i can never spell that) all over the breast. You'll get oodles of fat out - it's worth draining it off as it roasts.

Agree with all the others. I always roast it on a rack.

Make sure you drain off the fat and re-use, it keeps in the fridge for ages.

Thanks everyone. It was lovely, even very picky DS2 has seconds. Yes the house was very smokey but worth it I think.
