Apple Meringue CAKE, do you think it would work?

So, have a glutt of apples.

Want to make something different with them.

Anyone ever made an apple meringue cake? I don't want pastry, so was thinking a nice fluffyy psonge cake mix, a thick layer of sliced apples on the top, and then topped with meringue and baked.

Would you eat it? Would you make it?

Apples would have to be very tart to balance the sweet meringue and sponge, I think. Not sure...

I once made a cherry meringue tart. I made a cherry curd and a pastry base and a meringue topping. Did you not post a recipe recently for an apple crumble sponge cake? I had one recently in Ireland and it was fab. How about an apple charlotte, they are delicious and really easy?

Why not do a simple apple cake ( like pineapple upside down cake - I shove chopped apples in mine. as well).
I have done a apple meringue but with a pastry base - I made like an apple sauce and put in a bit of cornflour just to help it go a bit thick. I also put a layer of balckberry jam as did not put any sugar in with apples - It was really yummy.

We've had loads of variations of apple cake recently, just wanted to try something different, the struesel cake is particularly good though!

I may try it anyway, have made lots of different meringue pies before, but can't be bothered with making pastry right now hmmmm

Last night we had baked apples stuffed with dates and walnuts, that was very good but I feel the need for something a little more decadent tonight

Cherry meringue, sounds good! I like pineapple meringue pie too.

well, it's inventive...

our favourite apple cake has a sponge base, a layer of sliced apples and a crumble topping (1oz butter, 2 tbsp flour, 2 1/2 oz brown sugar rubbed togtehr) that melts and goes crunchy in the oven

(I do a 'streusel layer cake' too but it isn't apple, just sponge layered with a coffee and walnut crumble mix)
