come and help me with my nuts

I've managed to collect a cupboard full of nuts (I was in a 'I will eat a handful of nuts a day' phase but it never got off the ground)

brazils, cashews, walnuts, pine nuts... some of them getting less crunchy by the minute

I have a nut roast recipe in a book but it specifies hazelnuts - can I just substitute?

in the summer I was grinding them up and flinging them in flapjacks but now the kids are back at school they can't take nuts in their lunchboxes

any ideas?

yes, i'd use them all in your nut roast. grind them up first perhaps? but not the pine nuts, i'd sprinkle those both through the mixture and onto of it.

Cappo - I would happily grind the nuts and use as a hazlenut substitute.

If it's horrid well at least you tried.

Not that I think it will be horrid.

Make pesto out of the pine nuts.

I put cashew nuts in stir fry sometimes. Just beef or chicken, mange tout or broccoli. Soy sauce, oyster sauce and the nuts.

Someone on MN told me you can freeze fresh pesto so I did that the last time I did it and it was great.
