well that doesn't irriatate me as much as things being described as "pan fried"

of course it is pan fried - you didn't cook it (off ) by hovering over a live volcano

Pan fried = not deep fried. In restaurants, when it says fried, it means deep fried.

NQC is right.
But frying off or cooking off are actually cooking instructions ie frying off often refers to frying things in advance in order to prepare the recipe.
Cooking off can refer to cooking alcohol off a sauce.

I NEVER use the term on principle and actually no one uses it over here in the professional arena. Far too poncy.

We may say drain off, but then in Crouch End the local sauna was known as The Drain Off Shop.

Suzy those phrases were definitely used in professional circles over here and the majority of my colleagues were scumbag almost criminals not ponces.

you're right, carm, I do see where you are coming from.

I think it is the tv ponce brigade that has done them wrong and soiled them for the rest of us.

I bloody well hope so. although in reality he will be at the very, very bottom of the food chain so I doubt he will have any much influence on the bookings policy. But I am hoping for some quality Marcus Wareing gossip....
