I have always just wrapped them whole in tinfoil and then bake them for about an hour.

thicko alert - I didn't know you could roast them but they sound delish, will put some on the shopping list, thank you.

mmmmm wrapped in foil and roasted with garlic and balsamic vinegar

About 45 mins to an hour.

Or roasted with feta cheese, basil, garlic and sea salt I usually use the baby ones for this.

i normally put them with feta but never roasted the feta in with them! sounds lush, do you normally peel before roasting in this case?

Yes I'd peel before roasting if adding things like cheese, but you will get some bleeding. If they are baby beets I don't bother to peel them though.

The skins slip of easily enough once cooked anyway.

Also lush with haloumi

thanks - will check when i get back how big they (joys of veg box delivery)

hmmmmm haloumi too!
