Can I do anything with Lamb Chops that isn't grill or fry them?

You can roast them. They don't take very long, 15-20 minutes that's all.

I also have another recipe that includes potatoes and is a bit more of a full meal.

Greek Lamb
Sprinkle 6-8 chops with salt, pepper and oregano.
Tip 1kg sliced potatoes & 2 sliced onions into a roasting tin and drizzle over olive oil, bit more oregano and salt & pepper.
Roast at 170 fan (190 conventional oven) for 20 mins then put chops on top, pour 1/2 pint stock over potatoes etc and return to oven for 30-35 mins.
