Cheese and leek sauce,poured over the potato would be nice I reckon.

sauteed with bacon maybe?

thinly sliced and cooked in a cheesy or creamy white wine sauce.

Sauté the leeks gently in some butter then sprinkle on some flour, cook for a minute then add milk to make a leek sauce, serve over jacket pots, with a little grated cheese.
