Dd1 is very fussy about "casserole" type stuff but will happily eat a sausage casserole made with grated onion and carrot, passata and a tin of butter beans (left whole). I add honey, mustard and paprika to the sauce and use veggie sausages but I'm sure it would work with meat ones too.
