how do i stop them falling apart when i cook them?

More potato, roll them in flour then egg then breadcrumbs, don't have the oil so high?

I would guess that you would need to drain the squash and carrots really, really well to prevent the mixture being too sloppy.

does foil work instead of greaseproof paper?
