Fail-safe cake recipe needed please!

We're having an impromptu early birthday party for DS and his buddy tomorrow - they're both turning one so something simple and not too rich that even a cack-handed eejit like me can't mess up would be good!

I've got all the basics for a cake, and if I didn't have to go to the shops that would be much appreciated!

How about a simple Victoria Sponge recipe here with lashings of jam in the middle and ice the top for a birthday cake.

And if you want to make it a chocolate sponge, then once flour is weighed out, remove two tablespoons of flour and add the same quantity of cocoa powder.

You could make chocolate icing instead, or put chocolate spread in middle and on top!
