hotpot . . . what is it?? how do you make it?

have just read another thread about menu planning & it was referred to in there. was just curious really to find out what it is & how complicated it is.

ermm well I made a bacon and onion hotpot for dinner (and posted on the thread - so it may have been me )

Pre-heat oven to 200c

Peel and thinly slice potatoes, chop bacon (and old bacon will do - make no difference as it's effectively "boiled" anyhow), and slice an onion. Layer up the potato, bacon and onion starting with potato and ending with potato in a lightly greased casserole dish

Meanwhile cook a basic white sauce (flour, butter and milk). Pour over the layered potato/bacon/onions cover and put in oven for 45-60 minutes or until potatoes are soft

As far as I'm concerned any stew with sliced potatoes on top is hot pot. When I was little it had erm...neck of lamb? is that what it was called? in it. Here in Lancashire tis served with red cabbage. White sauce not authentic in this neck of the woods.

I usually think that hotpot means Lamb Hotpot.

here is a good recipe - I wouldn't worry about the kidney, I dont put that in but it would add to the taste. You can also let it cook for longer, just reduce the heat.

Well, I'm vegetarian so what i get wouldn't probably be the authentic one...here we have hot pot suppers- eg as PTA fundraisers- if you are lucky a veggie one is also provided, what I observe is a sloppy stew, with thin gravy, definitely not white sauce, always has sliced potatoes on top and comes with red cabbage as side veg. I think it has lamb in it. The hot pot I had as a child did, but that was darn sarf and no red cabbage there.

What? Hotpot without red cabbage?

i used to hate it when my mum made hotpot. god it used to make want to boak.

tmmes - I hated Lancashire hotpot when my mum made it too (no white sauce, lots of cabbage - blurghh) - but I did enjoy her bacon and onion hotpot

my mum taught me the best hot pot recipe its not an exact recipe but hear goes-

beef and beer hot pot

2 large onions
one medium pack of stewing steak cut into cube/or braising steak
1 tin of mackesons stout
3 oxo cubes melted with a pint of boiling water
salt/pepper
big slug of malt vinegar
2 large carrots sliced

fry off the meat then add all ingrediants to a large ovenproof pot and cook on 160 for 3-4 hours

thicken the sauce with gravy granules if to thin,serve with roast potatoes and green veg and enjoy the best hot pot ever!!!!!!!
