leftover pancake mixture....

is it ok for me to use the leftovers of this mornings pancake mixture tomorrow morning?? I have it kept in the fridge in a lidded container....it has some grated apple in it but i guess that should be ok???

Yes to pancake mix.

I think the apple may brown unless you have some lemon juice in it.

if you dont want to or have leftovers in future you can cook it and freeze the pancakes (i do this a lot when making pancakes for baby ds, can never be arsed to adjust the quantities down to make only a small pancake for him so just make lots and freeze the leftovers. they defrost in microwave in milliseconds)

We do this - also we use left over yorkshire mix for pancakes next morning.
