you know, like the ones on pizzas in italian restaurants!!

I'm assuming I just fry them until caramelised then add a splash of balsamic vinegar???

yep in butter is best and add balsamic once softened
you can also use red wine vinegar instead and also add a tsp of sugar

Butter, olive oil, red onions, pepper, salt, sugar, balsamic - medium/low pan until they are done.

brown sugar works best.

Yum, they are especally tasty with goats cheese.

You need to add sugar to caramelise. Throw the sugar in with the onions and fry, add the vinegar once they have started to turn brown.

They will take longer to cook than you think; keep stirring all the time so they don't stick.
