Can you freeze cake?

We have a glut of courgettes and I want to make a courgette cake or two, on the (probably unrealistic) assumption that my family won't scoff them as soon as they are cooked. Can I freeze them?

Yes, in fact I came across someone who even claimed it improved the texture! Not so sure about that.

Are you doing Nigella's courgette cake? I've often wondered what it's like.

I've never made courgette cake before, but Nigella's is the one I have in mind.

Let me know if it tastes good! I'm currently without an oven (and have been since beginning of June) so need a bit of cake baking by proxy to enjoy!

yes you can freeze it. Either freeze it without any topping and then add the topping once it has defrosted, or if freezing with the topping, open freeze first till the topping is hard, then wrap it in clingfilm, and then remove all wrapping before defrosting.

Agree about freezing - although not convinced it is a good idea to freeze with topping. I defrosted a carrot cake with the usual cream cheese type topping and was a disaster. The topping seemed to separate when defrosted and made the cake soggy.. Could have been a one off or to do with the topping but recommend you play safe and freeze untopped

I often freeze cakes - but not the topping. I've successfully frozen a pumpkin cake before, so I don't see why courgette would be different

Usually make one and freeze half. That way we don't scoff it all and I can whip out cake if people are coming around and seem like a domestic goddess
Have done it with carrot cake, banana and chocolate cake, lemon drizzle cake and a few others I can't remember.

We ate all the courgette cake, as it was so delicious!!! But it's good to know I can freeze the next one. Thanks to all.
