What can I make as a lunch box snack for me and DP other than flapjacks?

Have been making flapjacks for some months for me and DP to have in our lunchboxes (well, at home for me, since going on maternity leave), and am slightly running out of inspiration for fruit/chocolate chip/seed combinations to put in them.

Does anyone have any ideas for what I could make as an alternative occasionally? It has to either be able to be frozen and taken out on a day to basis, or last for at least a week (like the flapjacks, in an airtight tin). I am completely stumped!

Or if anyone can think of anything original to put in flapjacks...

Hopefully - here you go
COURGETTE, CARROT AND SULTANA MUFFINS

315g caster sugar
310ml sunflower/vegetable oil
3 medium eggs
275g strong bread flour
1tbsp baking powder
1tsp bicarbonate of soda
1tbsp mixed spice
250g grated courgette
250g grated carrot
50-60g sultanas

METHOD
preheat oven 200C/ fan 180C/ gas 6
whisk toegether oil and sugar. Then add eggs, one by one,mixing as you go.
Sieve in together , flour bicarb, baking powder and mixed spice. Mix well .
Finally fold in carrot, courgette, and sultanas, along with a good pinch of salt.
Spoon into muffin cases and bake for about 25 mins.

There was a fabulous recipe here for Malteser Tiffin cake - assuming that you're not in the least bit worried about fat/calories/sugar and dying early?

I have made it several times and have manfully resisted it - but am led to believe it's absolutely fab.

BIWI why on earth would you resist manfully? I suspect if I may make it DP may not get the opportunity to resist manfully as I will have wolfed the lot...

EachPeachPearPlum, cinnamon swirl recipes:

My lazy one:

1 packet puff pastry rolled out to a long rectangle

brush with about 2 tablespoons melted butter

sprinkle with lots of demerara and cinnamon mix

roll up into a spiral

Cut into half inch slices with a serated knife.

Bake for 12-14 minutes in preheated oven at 190°C

When baked drizzle with icing made with icing sugar and hot water.

If I'm not in a lazy mood, I make them with bread dough (made with milk instead of water and with sugar added), with the same principle of having a rectangle, sprnkling with cinnamon and sugar (and maybe raisins or chocolate chunks or chopped dates), roll up swiss roll stylee, cut into segments (about 3 inches thick), pack into a round baking tray, leave to rise so they are all huge and stuck together, then bake for about 30 minutes at 190°C. Again I glaze them with icing sugar mixture
