How do I dry shallots - prior to pickling?

Don't laugh, normally I dry them outside in the - ha! - sunshine....
But as it has rained for 2 weeks solidly here, Can I dry them in the house? Anyone a professional pickler

come on, I know there are more poncey produce preservers out there...

FMV - are they your own shallots?

I ask because I buy a net of shallots, then peel them, spread on tea trays, sprinkle with salt, then after a couple of days go on to pickle them, in plain pickling vinegar, none of this fancy adding chillies or peppercorns malarkey.

I dug them up yesterday but I was told not to pickle them while the stalks were still green. Well, normally, I dry them outside and they last for months for cooking etc. Have never pickled before. But can't work out whether they will just dry inside or not [dimmo]

We will be adding home-grown chillis...

Can you spread them on a table/tray/net thingy in the garage?

Or somewhere dry?

I have dim memories of my Dad drying shallots in the greenhouse, on the potting table

Um, how about an airing cupboard? Don't you wrap something up in newspaper and put them in an airing cupboard? Not sure what. Apples perhaps.

Oooh you need to come round and put them in the drying oven of my Aga. That'd do.

Or take them to a tanning salon? You could say they were your children, and they'd think you were just so mad you'd have unrestricted access to their tanning bed.

100. Did I ever tell you about our disastrous freecycling experience where dh took their precious apple storer thinking it was a shoe cupboard. Cue cringe-making telephone convo when she shrieked ''couldn't you see it was an apple-storer?'' And me ''er, no. We live in a 3 bed-semi. in the centre of town.With a pocket of grass outside. And a patio. We do not live on Featherdown Farm where the piggies frolic in the old orchard....''

Guess they are going to have to go on the sledge in the garage for a while...(It's the only use our sledge gets these days - potato chitting)
