how would you make a thick tomato sauce to go with pasta?

Have fallen out slightly with eggy bread after setting my frying pan alight on sunday.

Fry a finely chopped onion and garlic until soft. Add 2 tins of chopped tomatoes and a little sugar (half-teaspoon), and some Italian herbs. Bring to the boil and reduce to about half the volume. Season with salt and pepper. Liquidise.

Well made one lot of eggy bread quite successfully. But was only using a small pan and had some egg left, so then put some more fat in pan which was already hot and it just went up in flames. Told DC to get out, which they didn't, and grabbed towel and put it straight out but the flames must have been a foot high.

we had nowhere for herbs, so i palted a small basil plant on the kitchen windowsill, then it became indispensible but didnt enjoy the steam so i now have a very small rectangular pot by my front door with herbs in as i have no garden
