Portable, dairy-free food ideas?

Going to visit a friend and her new baby. As she'll have her hands full, I will be bringing lunch with me, so it needs to be either cold/microwaveable, and portable. She's also dairy intolerant.

Was thinking of cold roast chicken and salad, but wondered if anyone had any more exciting ideas?

Salad is a good idea - you couls also take tortilla wraps to make fresh.
Or dips - take a pack of pitta breads, some sliced red pepper, carrot batons and other veg, get a pack of houmus and pack of taramasalata - we had that yesterday (I have dd that is allergic to dairy)

Oh I love those.

But it's the crumbly salty feta that really makes it.

otherwise it's just a soggy salad sandwich.

do lots of layers

  • roast the veg
use hummus in place of cheese black olive tapenade pesto sunblush tomatoes thin slices of parma ham onions melted and caremelised bag of herb salad artichokes

the list is endless
