Storing fresh ginger

i shopped online this week and being completely rubbish with weights i have ended up with a massive piece of ginger.

what is the best way to store it to make it last longer?

can i freeze it?

yes and grate off what you need

You could always break half of it off and plant it!

I usually buy a a reasonable sized peice and its usually fine just in the cupboard for at least a couple of months.

thanks zippi, would you put it in a bag or foil or just as it is?

maureen you're lucky i must have unusual ginger because mine generally goes wrinkled and green within a couple of weeks.

stick it in some sand in a pot, it keeps fresh and grows too.
