Ideas, please, for veg dinner party menu for eight. No mushrooms!

I have 8 (or maybe 10) people coming for dinner on Sat. Three people are vegetarians, and I want to give everyone the same thing, so it has to be all veggie.

To complicate matters, one person doesn't like mushrooms. I don't want to make any kind of risotto or that Italian baked aubergine slice dish - I always do them for these guests. I need to expand my horizons, so I'd like your suggestions please.

No goat's cheese, it seems to be the staple fare offered to vegetarians lately so comes across as unimaginative. Ditto pastry things, although nice but some people may be bored to the back teeth with them.

I'd go with the curry or middle eastern theme, lots of different dishes served with fragrant rice. A nice salad for starter perhaps. Or middle eastern/Greek meze for starters and a second course of moussaka or something potato-ey. Posh icream for deseret (or a simple chocolate mousse made from silken tofu and good plain chocolate + a dash of liqueur).

I like this meal that was cooked for us a while ago.

Roasted mediterranean vegetables (aubergines, courgettes, peppers, onions, garlic and basil) marinated in olive oil, lemon and white wine vinegar in advance.

Roasted fennel with capers

Fried halloumi cheese slices

Cous cous and home made spicy tomato sauce.
