So I got a huge lump on fresh yeast in Tesco today. What to do with it?

(Apologies if this has been done but I did do a quick search on fresh yeast...)

What would be a foolproof recipe for a loaf of bread using fresh yeast and no bread machine that I could do with DS1 (8)?

Ditto currant buns?

Also, how long does it last?

Just use a normal hand mixed bread recipe - you cream the yeast with a teaspoonful of sugar, and then mix with warm water (hand warm, not hot - i.e around 37 deg C) to make up the correct quantity of liquid for your recipe. Leave to froth (shouldn't take long in a warm, not hot place)
Then mix flour and liquid as normal.
Knead and rise and bake as normal.
Use 1/2 oz yeast for every 1 lb of flour.

Can't help you with the recipe, but I can tell you how to 'start' the yeast.

put however much you need to use in a small bowl abd 'cream' it with some sugar. You will see it turn to a liquid, put it somewhere warm (if you don't have anywhere, but it is a larger bown of warm water and cover with a tea towel).

When it froths and has a 'head' of about 1-2 cm it is ready to use

I seem to remember it keeping for 5 or so days in the fridge - but it is a LONG time since I have used fresh yeast! (over 30 years...)
