I wouldn't mind the recipe for peanut butter if it's not too much trouble please?

Erm as far as how many jars of curd, that all depends on the size of your jars IYSWIM. Makes almost a kilo - so have a look at your jam/honey jars with labels on to get an idea.

I keep small/pretty/unusual shaped jars throughout the year, and make the curd for Xmas pressies.

450g peanuts
2.5ml salt
15ml olive oil

Put shelled peanuts into a moderate oven and heat until the pink shells will come off. Rub off the skins and mince the nuts twice to get them very fine. Ass slat & oil and mix thoroughly. put into a dish in the oven at 150 C/300 F/GM2 for 15 mins. Stir well to prevent browning. Cool and put into a screw top jar (450g/1 lb jar)

It isn't clear whether the nuts are shelled before or after weighing though.

I love the idea of banana jam! Will try it next time we have some manky ones (fed up with making banoffee pie).

I don't think I can bring myself to make banana jam. If anyone does, will you report back? I am imagining brown slimy sludge but would love ti hear that it is quite delicious.

Will def do peanut butter. Or maybe almond butter.

If you regularly have manky bananas, you can freeze them to cook with later.
