Your best Short-Bread recipes please.....

I want to make really good short-bread, like the stuff you buy in M & S.

Anyone have a brilliant recipe??

I have two - one is for the biscuity type you roll out and cut, and the other is for the sort you press into a tin and cut into fingers afterwards:

1oz sugar
2oz butter
3oz flour
cream marg & sugar, stir in flour, knead, roll out, cut out, 10min gas 4.

10oz plain flour
4oz sugar
4oz corflour
8oz butter
melt butter, stir in everything else, press into lined swiss roll tin, 25min gas 3 top shelf, sprinkle with caster sugar.

Mrsb could you use margerine instead of butter or would that just be crap ?

oh yes, whatever you have in teh fridge

unsalted butter obv the best (esp if you want an M&S-like result) but I have made both with Flora, Utterly Butterly, Stork etc

Try 8oz butter, cup icing sugar, 2 cups plain flour and 1 cup cornflour.

Works rolled out and cut or pressed into a tin.

marg works, but butter tastes a whole lot better.

best done by hand but I tend to bung in food pro and works fine.

But but Mrs B which is nicer? If I have never made shortbread before which of your two fabulous recipes do you recommend?
