I am making 2 meringues.Can I freeze one when its made and save it for another day?

no need to freeze, plain meringue (before addign cream etc) will keep for a week or more in an airtight tin/tupperware

It would never last that long in our house, DP would have eaten it after a day

oh yes, so long as properly airtight
there's nothign in them to go off - might get a bit chewy though.

Mrs B is (as always in matters cookery) quite right.
But, interesting meringue-fact - even when frozen, it doesn't taste frozen. No idea why that is, but meringue ice cream cakes are spectacular

becasue they have such a low water content there's nothing in them to freeze
