I dont know if you like fish, but when I do a nice dinner for h & me, once dc are in bed, I do this one and it is really tasty, without too much effort.

Pan fry some cod fillets, keep warm.
Chop some chorizo into small pieces and fry, with some chopped up spring onions, garlic clove, chopped. When chorizo has browned, add some chopped peppers from a jar, drained can of green lentils, some lemon juice and some chopped parsley.
Eat with the cod - scrummy!

Failing that, I would do a nice rump steak with roast veg and couscous.

i have decided to do something with chicken breast sundried toms olives tomatoes and chili with penne

i am now rather belatedly dyeing my hair

and have also to do some tidying up and changing my bed

and also trying to think of something to do tomorrow as well as climbing

You sound like me - I would be dying my hair at the last minute too!

Your meal sounds nice - we just had king prawn stir fry with noodles - my mouth is still tingling with the chilli.
