I don't have a lot else, possibly some cheese.

Spicy spanish omelette.

Peel and slice the potatoes thinly, fry in olive oil until they are soft. Add a thinly sliced onion halfway through if you have one, then add the chopped chillis. Beat the eggs and leave the veg to stand in the egg mixture for 10 minutes. Add salt and pepper.

Meanwhile fry the courgettes until golden brown. Add the egg/potato mixture and flatten out the potatoes a bit. Cook on a medium heat until the bottom is done then stick under the grill until the top is done. Add some cheese before grilling if you like. Leave 5 minutes then slice and serve.

I would use about 600g potatoes to 6 eggs by the way.

Well we just eat it with salad and it fills us to bursting point - 2 adults and one toddler. You could make it 900g and 9 eggs if you have them. You'd need a big frying pan though!

no salad but have remember we have some frozen corn on cob
