What to do with fruit cake

Went slightly overboard with simnel cake at easter. Still in good order, but does anyone have any recipe ideas using fruit cake as an ingredient?

Yes, simnel cake ice cream! I would suggest buying some really good quality vanilla ice cream + stirring in chunks of the cake. I've often done this with Christmas cake + it's lovely!
