Cooking blackcurrants

Right, I've got a small bowl of home-grown blackcurrants (not by me though!) and I want to make a sauce with them to have with vanilla ice-cream.

Do I need to tail them, iyswim? (stalks will be removed but there's a browny bit at the bottom)

Do I need to cook them with sugar even though we'll be eating them with something sweet?

that's why ribena has so much sugar in it!

No you don't need to tail them. Just wash and add as much sugar as you like.
