chocolate wedding cakes

my mother in law is making the wedding cake for my brother in laws wedding in Dec. She's made all her childrens cakes so she's quite practised. However he wants chocolate cake, 3 tiers. She's having practices at the moment but all the chocolate she can get is too soft - anyone have any recommendations and also recomendations for decorations etc for chocolate cakes. Thanks

It won't - they'll need a stand which supports each tier individually, or use dowels through the pillars between tiers.
I presume you mean a chocolate sponge, which pretty much dictates roll out icing rather than royal - but surely any decoration goes? Or does he want chocolate decoration as well?

When I've done chocolate wedding cakes I've used an almond chocolate sponge, then marzipan, then chocolate ganache over the top of that. Cakes on thin boards and dowels through to support them. You can get chocolate roll out icing too from specialist suppliers

Decorated with silk flowers and ribbon, or could use premade chocolate roses from Squires or similar
