Ingredients for veggie lasagne?

Am doing veggie version of this, what do you put in for filling, I'm thinking courgette, onion, peppers, mushroom......but it doesn't seem to exciting. Is that pretty much it? Aubergine seems weird.
Thanks for any suggestions.

you can add finely chopped or grated carrot, courgette, peppers, onions (I like adding lots), garlic, lots of tomatoes or tinned tomatoes, and Iusually add either red lentils, green lentils or millet too to add some protein.

I use whatever veggies I have left at the end of the week to make a veggie lasagne. This weeks has brocolli, peppers, carrot, corn, mushrooms and onion. Aubergine is good in veggie lasagne as it absorbs all the flavours.

I made it with courgette, mushrooms and butterbeans the other day and my guests liked it.

You can put pretty much anything. I wouldn't normally put baby sweetcorn. The ratatouille mix that you described is fairly standard in our household.

roasted squash is nice, if a bit of a faff. i like aubergine in mine too.

Thanks for that, if you are adding lentils, do they need to be cooked before hand or do you just add them to the ragu? Would you add spinach in layers? Would that be nice or pine nuts on the top? I would like this to be really yum, it is for a dinner party.

If you're making lasagne for a vegetarian, then you could just use Quorn mince instead of beef mince. Use garlic, tomato puree and herbs to add extra flavour.

If you're making a vegetable lasagne, then stick with what everyone else has put!
