How can I make a CHINESE curry.

As in one that tastes like it is from the Chinese takeaway?
Without (this is the hard bit) going to the shop and buying anything I don't already have in, or is really easy to pick (easy like, have in the local corner shop, as it's miles away to go to the nearest supermarket).

For starters, I do not have curry paste, except thai red curry paste.

I've been faced with exactly the same dilemma. You want lots of turmeric. Do you have turmeric? I haven't ever succeeded in making something exactly like it, but last time I tried I minced onion and sweated it with a curry powder made from 75% turmeric and the rest a mixture of cumin and chilli (v small amounts), and Chinese 5 spice. Then I added water and thickened with corn flour. Not a total success taste-wise but it looks just like it! OK, so that's not much help. But ask a silly question...!

Agree, get it from an Asian/Oriental grocers.

Many places in South/South East Asia eat curry style meals (including Japan)

My dad said some of the best Indian food he tried was in Hong Kong (or was it the best Chinese food was in India?)

I have insider knowledge... the curry is indeed made from a paste, but the paste is made (in my experience) on site in the chinese take away. from what i remember the paste has vegetables and fruit (ripe bananas is def in there) as well as a load of curry power. i think that the veg & fruit is fried up first before the powder is added.

to make the sauce itself some paste is taken and water and thickening agen (corn flour) added.

this isn't going to help you tonight!
