Recipes for salsa?

Anyone got any good recipes for salsa? And how long will it keep?

I got one, I'll go get it!

Fresh Salsa

4 spring onions, thinly sliced
125g ripe tomatoes, diced (though I usually cheat and use tin of organic chopped ones)
1 medium-hot fresh green chilli, seeded and chopped
2 tblspns tomato passate (I use puree though)
2 garlic cloves, chopped
lemon juice, to taste
chopped coriander

Combine all the ingredients. Done.
Or whizz them up for a few seconds for a smoother one. DONE.

don't use spring onion, use red onions! Apart from that it is similar to what I do. Red onions are so much nicer in salsa though.

Bumper, it should keep for 3 or 4 days in the fridge.
