Can I make cheese sauce with 2 day out of date milk?

if so can I freeze it and if so what's the best way to defrost?

if it tastes and smells fine then it is fine.

Freezing is fine, to defrot just take it out of the freezer and let it defrost overnight in the fridge, or for a few hours out of the fridge, or stick it straight in a pan and heat it up this way, from frozen. Nothing wrong with that.
