How do I butterfly a chicken breast?

The recipe just says cut down the middle and fold it out, but I can't see how that will work.
Also, if I'm stuffing it with mozzarrella then wrapping in oarma ham, will it stay wrapped or do I need a skewer to hold it together?

to butterly it oyu make tiny cuts in the side of eahc breast to make little flapppy "wings" oyu attach wiht a cocktial stick
