I'm making some beetroot and goats cheese filo parcels, the filling is really yummy .

I've made the parcels up but want to cook them at dinner time so that they are nice and warm. Will they be ok in the fridge covered in cling film? Sorry for this being a diumb question but I'm a filo novice.

Should be - or try a damp tea towel - you just want to stop it drying out.

Ok, another question, what about freezing??

I think they would freeze fine, as long as the filo wasn't previously frozen. TBH, I have always found filo to be a lot tougher than is made out, and even if it does crack a bit, it still looks and tastes fine. I never usually bother with the damp t towel business. Beetroot and goats cheese sounds yum - have you posted the recipe??

This is the first time I've made it so I'll wait until I've tasted the finished results before posting. I just got it from a magazine that was lying around at work.
