eg, if I use half a tin of chickpeas or kidney beans, is it possible to freeze the other half to use later?

probably
but I'd keep them in a tupperware in the fridge for a week

I usually do keep them in tupperware in fridge, but they last much less than a week. Often they're smelly after a couple of days in the fridge and I end up throwing them out.
