check with her - my neighbour doesn't eat bread but can eat ryebread/rice cakes/oatcakes etc. Also it is quite firm so if you serve it on a bed of salad, it doesn't really need bread anyway

If she eats chicken (not holding out much hope tbh), you could make Thai Chilli Chicken salad.

Fry up 400g chicken mince with 4 tbsp chilli paste/curry paste till golden. Then toss this mixture in a bowl with half a finely chopped red onion, 2 tbsp lime juice, quarter cup chopped coriander leaves & quarter cup chopped mint leaves. Serve barely warm, or cold, scooped into iceberg lettuce leaves.

never tried this, but looks piss easy. actually didn't you say non-dairy? how non-dairy are we talking? is this an allergy or a poncey non-dairy?

Easy Mushroom Pate
2 tablespoons olive oil
350g/12oz mushrooms
2 sticks celery finely chopped
1 garlic clove peeled and crushed
1 tablespoon lemon juice
200g reduce fat soft cheese
1 teaspoon anchovy paste
salt & pepper
parsley chopped as a garnish

  1. Heat oil in a frying pan and add the mushrooms, celery and garlic. Fry
gently for about 10 minutes until soft and any liquid has evaporated. Stir in the lemon juice.
  1. Allow the mushrooms to cool slightly and then place in a food processor or
blender process until smooth.
  1. Season to your taste and serve with toast, pitta bread or crackers.

the other week i had: one dairy free (for real), 2 veggies, one no-fruit, one no red meat, one allergic to kiwifruit, one allergic to fish/shellfish (really)

i did

huge chicken casserole (mostly thighs, some drumsticks, marinated in mustard/garlic/olive oil then simmered in wine/stock
new potatoes
big salad
roast veg
big fruit salad
ice cream for kids
cava/red/white wine
water
