Help with sponge cake,

Hello

My and dp are making dd2 a cake for her first birthday party tomorrow.

We have never made a cake before.

SIL said she saw this mornng chef Phil Vickery make one last week and it looked fab.
It was a sponge cake with butter icing and he put sweets and choc buttons all over it.

Does anyone know how i can fnd this recipe?

I have looked on the this mornings website but can't find it.

For a basic, all in one sponge recipe use Mars Lady's LDC recipebut substitute the lemons/lemon rind for half a teaspoon of vanilla essence.

Melted chocolate on the top plus smarties will always be a crowd pleaser.

And if you want the chocolate to set nice and smoothly add a dollop of oil to the melted chocolate before pouring it on!

(oh and you can reduce the quantities to make a small cake.. 6,6,6 and 3. 4,4,4 and 2 )

scroll down a bit for buttercream icing. I always add a couple of tablespoons of milk in too. Makes it easier to spread.

I always add baking powder to my sponges (and milk). Makes them lighter

I made a strawberry, cream and jam sponge this afternoon and used

4oz butter
4oz sugar
2 eggs
4oz SR flour
and a pinch of baking powder

DELISH and has now all gone.

Decorate with smarties and it will be a hit!
