Baking with fruit.

How can I prevent fruit from sinking when I'm baking?

I made lemon and raspberry muffins last night but the raspberries sunk into the mixture amd leaked through the bottom.

I've also made a banana loaf and had the majority of the fruit sink to the bottom, same with sultans while making a fruit loaf.

Any advice and tips would be appreciated.

I have heard of coating the fruit in flour before adding to the cake mix

Good idea. I'll try that. I wonder if it;d work with mashed bananas.

not much help but how about sticking to cakey pudding - pudding goes at bottom of pan then pour cake mixture on top. hey presto it is intentional
