DD's 2nd birthday is on Friday and she's obsessed by carrots. Loves them!

Any carrot cake recipes? Cream cheese frosting?

Yes! I made carrot cake for my work buddies when I left yesterday and I have it conveniently saved in word:

Moist carrot cake

3 medium organic eggs
300g / 10oz light brown sugar
250ml / 9fl oz sunflower oil
450g / 1lb self raising flour, sieved
2tsp baking powder
450g / 1lb carrot, grated
150g / 5½oz apple, grated
100g / 40z walnuts, lightly toasted and finely chopped [I use whatever nuts or seeds I have in the cupboard.]
2tsp bicarbonate of soda

? Preheat oven to 170c / gas mark 3
? Grease a 22cm spring-form cake tin and line the base
? Combine the eggs with the sugar and oil in a bowl.
? In a separate bowl, mix together the remaining ingredients, then fold in the egg mixture.
? Spoon into cake tin and cook for 1hr 40mins or until well risen. Insert a skewer / thin bladed knife, and if it comes out clean, the cake?s cooked.

Oh, and the icing (which I've never made) is

1lb cream cheese
12oz icing sugar

Once the cake's cool, beat the cream cheese and icing sugar until smoth.
Leave to harden for 30 minutes before spreading.

Here is a carrot cake recipe I use all the time. I use wholemeal self-raising flour, but you can use normal self-raising. I made it the other night, actually. It is easy peasy and lovely!

6oz light muscovado sugar
6fl oz sunflower oil
3 large eggs, lightly beaten
5oz grated carrot (about 3 med. carrots)
4oz chopped dates/raisins/nuts - whatever you fancy!
grated zest of 1 large orange
6oz self-raising wholemeal flour
1tsp bicarb of soda
1.5 tsp mixed spice (or cinnamon and nutmeg)

  1. Lightly mix sugar, oil and eggs in large bowl. Then stir in the carrots, orange rind and dates/raisins/nuts.
  1. Preheat oven to 180'C/Gas 4/Fan 160'C and oil & line a 7inch square cake tin.
  1. Mix flour, soda and spice, then sift into the bowl. Lightly mix all the ingredients.
  1. Pour mixture into tin and bake for 40-45 mins, cool in tin 5mins, then turn out onto wire rack.

I always make a peanut butter icing for carrott cake-tis yummy.

just a normal butter icing but with loads of crunchy nut butter in, natch only suitable for non allergy sufferers!
