how do you make garlic mash ?

Make dry mash. Heat up milk with a clove of garlic in it OR if you like it strong, puree garlic in it OR add some roasted garlic to it. Mix together.

Make the mash as normal and either roast the garlic so it's all lovely and oozy and spot then mix it in or cook very gently to soften it in olive oil. Yum.

Delia's way is to chop garlic and add it to a fair amount of olive oil, which you then heat incredibly gently so it doesn't fry for about 30 mins. Then add to freshly mashed potatoes and finish with an electric whisk. It is bloody gorgeous.

The other thing you can do is make the mash and then add garlic granules (you buy it in the herbs and spices section) or a tube of garlic puree (similar idea to tomato puree) and just keep adding it until it tastes as garlicky as you want it!

i just added some ready made garlic butter, you get it in the butter section at supermarkets
