posh picnic food for useless cook

i've signed up to make a classy dinner picnic for me and someone else who is a really good cook

am panicking

she's thin as a lath so my normal cheese and pickle doorstops and hard boiled eggs won't do

raspberries will be fine for sweet stuff

any ideas?

Waitrose have a new prepacked posh deli range, including things like seafood salad (octopus etc), stuffed baby peppers and marinated anchovies, which are all lovely.

You could also get a nice quiche.

You could use other ingredients if you prefer, it;d work equally well I think.

I usually do a baguette, like this:

Cut French Stick in half, lengthwise

On one half, spread pesto

On other half, spread tapenade (or cream cheese)

In the middle put lettuce, spinach, mozzarella, tomatoes (baby or sun-dried) etc (leave out if you used cream cheese instead of tapendae)

Cut into portion sized bits and wrap tightly in foil.

Also, tabbouleh, couscous salad etc

and fruit for dessert

can I crash this thread? Need ideas for a posh Henley picnic for 6. Someone else is doing starter (home smoked wild salmon) and pud (homemade pavlova) and I'm doing main.

I was thinking of getting a game pie from posh local butcher that can be eaten cold but what to have with? It needs to be something that can be transported in a cool box for a couple of hours to get there...so I'm thinking seafood a bad idea. Is potato salad just boiled pots, Mayo and chives? Is potato salad and green salad enough with pie?

I think the green and potato salads should be enough, though perhaps some lovely fresh good quality tomatoes on the side would be nice too, you could also throw in some boiled eggs with salt and pepper.

Go to a good Italian deli and raid it - lots of antipasti type things - posh Italian meats, cheese, good bread, olives, nice wine.

bought pie (thank you waitrose - grr posh butcher who didn't have any), made potato salad and bought deli stuff. Was a roaring success - though the baby peppers stuffed with goats cheese from waitrose are not merely "spicy", they're HOT.

Couscous with med veggies

Make up a packet of couscous, roast some meditteranian veg(frozen ready prepared will do) mix together.
Serve with rocket and flatbreads.

Best ever , ultra class sandwitch!

Get a 'cob' style loaf, cut away a 'lid' from the top, and scoop out most of the soaft loaf fromn the inside, leaving the crust.

Paint the inside with olive oil.

Layer salad leaves, mozzerla cheese, olices, sundried tomatoes and parma ham until full. put on the lid and wrap in cling film. Put the the fridge overnight under wirghts....tins of beans will do! On the day slice into wedges

Afters strawberroes dipped in dark chocolate

Trust me on this VVVVVVVVVV nice

Glad you had a lovely picnic.

How was the game pie? I love game and if it's good enough I may consider making the journey to Edinburgh to purchase one, and no doubt a few other things.
