Couscous salad recipe?

Has anyone got a good couscous salad recipe that would be good in large quantities?

Add juice of 1 lemon, 1/2 bunch spring onions, finely chopped tomatoes, parsley, mint, and olive oil to the cous cous. Use loads of herbs, this is simple and tastes delicious.

Jamie Oliver one that's really nice - but I chop the asparagus a bit more so it's little bits of stalk and the heads. It's really nice if you do quite a tangy dressing, with some wine vinegar as well as lemon juice.

Dried couscous
Hot veg stock
1 lemon
1 tin chickpeas
Small handful fresh mint, shredded
Handful of sunflower seeds/pine nuts (optional crunch)
Finely chopped cucumber pieces (half a cucumber is enough)

I do this by eye rather than specific weight. Couscous swells and roughly doubles in size so get a big bowl and tip as much as you need in it. Cover with the hot stock and juice of the lemon. Leave for 10 mins to cook. Fork through lightly to loosen any clumps.
Add tin of chickpeas, mint and the cucumber. My DDs love sunflower seeds to for the texture.

Sometimes I add dried apricot pieces, sultanas and almonds with a little orange juice in the stock.
Other times I like it really really plain if going with spicy BBQ meat accomp.
Couscous is so simple and easy - add whatever you have in the cupboard and you cannot go wrong. As long as you put enough stock in and give it time to soak it up, it will be fine.

I make the same as rosealbie but with olives, feta and cucumber added. Love it. Mmmmmmmm couscous!

Roast pieces of courgette, red onion, aubergine & peppers in olive oil.

Add to cous cous with fresh chopped mint, parsley, corriander & lemon juice.
