Ooh, please do one. I'm hopeless at organising a week's shopping.

No quorn or meat substitutes if possible please, I can't get them here and am not keen on them anyway.

okay ... I don't do meat substitutes either so here goes: 14 days worth, most can be served with bread or whatever to bulk it out a bit, give me a shout if you want any recipes!

Portobello mushroom burgers

Roasted veg (aubergine, sweet potato, courgette etc) with quinoa (or rice)

Broccoli, red pepper & cashew nut stirfry

Superfood Salad (basically I pile in loads of spinach, rocket, roasted sweet potato, feta, pomegranate, grilled peppers, black olives, avocado, cherry toms, cucumber, sprinkle seeds over the top.. it's a meal in itself)

Beetroot, lentil & goat's cheese salad

risotto - my faves are mushroom or butternut squash w/ pea

Greek beans (butter beans cooked in tomato with garlic, oregano etc)

veg chili (red kidney beans, tinned toms, peppers, garlic, onion, mushroom)

sunflower dahl - red lentils cooked in stock with a bit of veg, spinach & grated carrot work well - stir sunflower seeds in at the end

sweet potato fritatta - mashed sweet potato, fried onion, wilted spinach, eggs

egg fried rice - rice, eggs, peas, sweet chilli sauce

brown rice salad - rice, pineapple, sweetcorn, spring onions, sultanas

lentil lasagna/ lentil bolgnese

pasta with basil, spinach tomato & black olives

Have you got a recipe for the mushroom burgers?

Rice salad - I make mine with either smoked tofu or chickpeas, sunflower seeds, spring onions, carrot and whatever crunchy veg is going, dressed in a mustard vinaigrette.

Either that or Tabbouleh but made with either millet or quinoa (in fact I shall probably make that tomorrow now I think about it)

What recipe have you got for the lentil bolognese? I've tried several recipes for veggie ragu but have not really found one I've liked

I've loads of pasta and risotto recipes (I live in Italy so it can't be helped) so if you'd like to swap recipes let me know.

Have you also got a nice recipe for a dessert using silken tofu and maybe bananas? I've got both, both uneaten and about to go off. I vaguely remember a syllabub type recipe from years ago but any moussey/creamy thing will be OK.

Cool! glad you guys like the sound of it. I'm vegan and don't eat wheat so all of these are an approximation of what I'd eat

Lentil bolgnese - there was a thread on here the other week with a really good recipe, hang a tic while I try to find it again...

sooooo jealous that you live in Italy .. where?? It's my dream to live there, even just for 6 months or so .. have studied the language and realy want to be fluent. And eat my heart out, while I'm at it! Yes, please send me some risotto & pasta recipes, I just eat the wheat-free versions of pasta ... not as good, but hey-ho.

Stargazing, I'm up north, near Milan. Re the pasta spelt is quite a good alternative, at least it doesn't go all cloggy like the other wheat alternatives.

Fave sauces for pasta:

  • broad bean, spring onion, cherry tomatoes and mint, pan fried and served with sahvings of pecorino
  • alla norma - aubergine, onion and tomato sauce, again served with shavings of pecorino
  • Carbonara but without the pancetta
  • Pan fried cauliflower and pine nuts
  • pesto mixed with canellini beans, chopped fresh tomato and spring onion. Serve with lots of black pepper.
  • Broccoli or spring greens (here it's cime di rapa, or "turnip tops") pan fried with garlic, served with orecchiette pasta. You can also add capers as a contrast (the original recipe has an anchovy in).
. pasta e fagioli (pasta and bean soup, use borlotti beans only, the others don't work as well)

Risotti:

  • Pumpkin (great in the autumn, cooked with a parmesan rind)
  • Broad bean and fennel
  • Swiss chard and crescenza
  • Spring vegetable
  • Radicchio

I know there are loads more but I'm suffereing from a mental block due to the excessive heat here. All I can think about are cool salad dishes and melon at the moment.

Does anyone else have the same problem as me? When I make my burgers they always seem to go very soggy. Am I perhaps overblending?

i am an extremly rubbish cook!i suprised myself(and my husband!)this week by cooking ratatouille(sp?) and quorn cottage pie.tonight is either vegtable lasagne or mousakka(sp?).i dont know whats come over me!
