Baking with vanilla sugar.

I'm going to be making banana bread later and the recipe says to use vanilla extract which I have, however I'm wondering if I can replace some of the caster sugar it calls for, with my vanilla sugar.

If so how much of the sugar can I or should I replace with the vanilla sugar and if I do this should I still use the vanilla extract?

I make my own vanilla sugar and use that whenever it asks for sugar but still add vanilla extract ....
