Have two foodies and two non foodies coming for dinner tomorrow.

I have no oven to speak of and dh sent let the repair man leave because he couldn't find a parking space I do have one small convenction oven but I can't fit a lot in it (is 30cm one on range cooker) plus I can't really do convection oven cooking any more after years with a fan oven.

I HATE doing things with lots of last minute stuff, like to have most done in advance really

What can I cook?

Doesn't have to be fancy, simple good ingreds type stuff will do.

I can't believe your guests would expect Michelin starred food if you have no cooker!
They have come to see you,not to experience culinary orgasms.

Get a takeaway, and get them drunk.

OK......

You need tomatoes (tasty ones!), tin crab, mayo, avocadoes.

Blanch tomatoes and take skin off. Deseed and finely chop. Season.

Tin crab or fresh crab. Season. Add small amount mayo so it sticks together.

Avocado. Mash and season.

Then in a biscuit cutter ( a round one ) layer the different mixtures. Start with avocado, crab and tomato. Layer to the top. Leave in fridge to set.

Serve with rocket.

It looks lovely when it comes out. summery and colourful.
